BBQ Ribs

We love ribs that fall off the bone and have found that slow-cooking them in the oven and finishing them on the grill is our favorite method. If you are a grill master and have your own special method, by all means, follow your heart! Plus, our housemade BBQ sauce, mac & cheese, and slaw are the perfect sides.

Instructions:

1) Preheat oven to 275ºF.
2) Place spare ribs on a foil-lined baking sheet (or large roasting pan) in a single layer, meat side down, and cover tightly with more foil. Place in oven and bake until tender and almost “falling off the bone”– (about 2-2.5 hours). Now is a great time to make the cabbage slaw!
3) When the ribs are ready, remove from the oven (and increase oven temperature to 425ºF for the mac & cheese) and drain the drippings. Preheat
grill to 500ºF, or high heat. Brush ribs with our housemade BBQ sauce, and grill both sides until the sauce is caramelized – (about 5 minutes).

No grill? No problem! Glaze your ribs with BBQ sauce and broil in the oven, meat side up, until the sauce starts to bubble and caramelize – (about 3-5 minutes). Be sure to watch closely so they don’t burn!

4) Toss the cabbage slaw mix with your desired amount of San Juan dressing, season to taste with salt and pepper, then refrigerate until ready to serve.

5) Place mac & cheese in an oven-safe dish, sprinkle with topping, and bake in the oven until warmed through and the top is brown and crispy – (about 20-30 minutes).

Or feel free to warm the mac & cheese in the microwave until hot and steamy (about 5 minutes – stirring halfway through), place in an ovensafe dish, sprinkle with topping, and broil in the oven until brown and crispy – (about 2-3 minutes). Be sure to watch closely so it doesn’t burn!

6) When ready to serve, place ribs on a platter with the remaining BBQ
sauce on the side. Serve alongside mac & cheese and cabbage slaw.
