Butter Chicken

This warming comfort dinner is perfect any night of the week! Our flavorful sauce and extra-tender chicken are served over steamed rice and paired with a crunchy cucumber and tomato salad. Bonus? Your stovetop or microwave will be doing all the heavy lifting, so you get to enjoy having dinner on the table in minutes!

In Your Kit: 

  • K&M Butter Chicken
  • K&M Jasmine Rice
  • K&M Fried Shallots
  • English Cucumber
  • Vine Tomato
  • Sweet Onion
  • Cilantro
  • Lime

Pantry Items:

  • Olive Oil
  • Salt & Pepper
  • Sriracha (optional)

 

CUCUMBER SALAD:

  • Slice the cucumber into thin rounds, slice half of the sweet onion into thin half-rounds (reserving the rest for another use), dice the tomato, mince the cilantro (including some of the stems – the most flavorful part!), and slice the lime in half.
  • In a large bowl, toss all veggies together and dress with a squeeze of lime juice, a drizzle of your best olive oil, and salt and pepper to taste. Allow to marinate for at least 10 minutes.

BUTTER CHICKEN:

  • Warm the butter chicken and jasmine rice on the stove or in the microwave with the lid askew until steamy.

TO SERVE:

  • Serve butter chicken over scoops of rice topped with fried shallots and cucumber salad on the side!

Chef’s Tip: We love a drizzle of sriracha for a little extra heat!
