Chef Ethan Stowell's Rigatoni Bolognese

Get the Tavolàta experience at home with Chef Ethan Stowell’s slow simmered Bolognese sauce over freshly made rigatoni. A bright citrus beet salad is the perfect complement to this hearty Italian dinner.

    1. Bring a large pot of salted water (it should taste like the sea!) to a robust boil.
    2. Transfer salad mix to a serving bowl, and top with the citrus marinated beet salad.
    3. Optional: If you would like to have the true Tavolàta experience at home, zest a little bit of the orange, chop the mint, and reserve for garnishing the pasta.
    4. Carefully slice off the top and bottom of the orange. Stand the orange upright and following the curve, carefully cut away the peel and white pith from the sides, then cut into segments between the membranes or slice into beautiful rounds. Add the oranges, a handful of pistachios, and a sprinkling of parmesan to the salad. Just before serving, toss with desired amount of citronette dressing and season with salt and pepper.
    5. Add rigatoni to boiling water. This is a fresh, artisanal pasta so it will cook in about 3-4 minutes. Boil the pasta until it is cooked al dente (a slight chewy bite in the middle) then strain water and transfer back into the pot. Pour in desired amount of Bolognese, stir carefully, and cook for a few more minutes to meld the flavors.
    TO SERVE: Transfer the pasta to a serving dish or serve directly from the pot, garnish with a generous amount of parmesan! Serve alongside the citrus marinated beet salad. Enjoy!
