Instructions:
1) Cook the couscous pilaf according to the instructions on the package.
2) While the couscous is cooking, cut the cucumber in half lengthwise, reserving 1/2 for another use, then thinly slice into half-moons. Cut cherry tomatoes in half and then thinly slice the shallot.
3) Portion the couscous into deep bowls, then assemble all of the bowls exactly how you like! Layer in the arugula, cucumbers, shallot, tomatoes, artichoke hearts, lemon & herb chickpeas, and Kalamata olives. Top with sprinkles of feta, and desired amount of tzatziki.
Chef’s Tip: When not in a rush, Stephanie likes to arrange all of the toppings on a serving platter so her family can keep mixing in more pops of flavor as they get to the bottom of their bowl!
