Meyer Lemon Chicken with Olives

    Pantry items: 

    • Olive oil
    • Salt & pepper
    • White wine (recommended)


      1) Preheat your oven to 400°F and line a baking sheet with parchment paper.

      2) On the baking sheet, drizzle about 2 Tbsp olive oil over the chicken. Drain the olives and add to the baking sheet with a few sprigs of rosemary.

      3) Halve the lemons and place around the chicken.

      4) Pour a bit of white wine into the baking sheet, if you have some on hand. Carefully place the baking sheet into the oven, and roast until the internal temperature comes to 165°F - about 30 minutes.

      Chef’s Tip: About halfway through, pull the baking sheet out of the oven, and spoon the pan drippings over the chicken, then carefully return to the oven.

      5) Transfer the salad to a serving bowl and toss with the desired amount of dressing. Season with salt and pepper and top with shaved parmesan.

      6) Warm the jasmine rice in the microwave with the lid askew until steamy. 

      7) To serve, plate the chicken over the rice with the roasted lemons and olives and plenty of pan sauce, and the salad on the side. Light some candles and enjoy!

      Ted’s Tip: The Meyer lemons are edible, skin and all, so be sure to give them a try!
