Pacific NW Salmon Dinner

We love this bright and herby salmon dish (halibut works great too!) served with an herby twist on our classic rice pilaf alongside fancy green beans. A simple, delicious dinner, perfect for weeknight entertaining!

SHOPPING LIST:

Salmon or Halibut (6-8 oz)

K&M Everything Compound Butter

1 Lemon

K&M Classic Rice Pilaf

1 Shallot

Dill (1 bunch)

K&M Fancy Green Beans

K&M Chili Salt

Toasted Almonds

K&M Basil Parmesan Aioli

 

PANTRY ITEMS:

Salt & Pepper

Olive Oil

Parchment Paper

 

PREP:

1) Preheat oven to 400ºF and line a baking sheet, large enough for the salmon, with parchment paper. Bring a large pot of water to a boil and season generously with salt (it should taste like the sea!).

DILL RICE PILAF:

2) Prepare rice pilaf according to the package, using the shallot. Just before serving, stir in the minced dill.

SALMON or HALIBUT:

3) Thinly slice the lemon into rounds, removing large seeds.

4) Place salmon (or halibut) on the parchment-lined baking sheet, skin side down, and season with about 1 tsp kosher salt per filet. Top each filet with a spoonful of everything compound butter and 2-3 thinly sliced lemon rounds.

5) Bake until the fish flakes easily with a fork (about 12-15 minutes).

FANCY GREEN BEANS:

6) Right before the salmon is done, add green beans to the large pot of boiling water and cook until tender-crisp (about 3-5 minutes). Immediately transfer to a serving bowl using tongs or a slotted spoon, leaving behind as much water as possible, and toss with compound butter to coat.

7) Top with toasted almonds and chili salt to taste.

TO SERVE:

8) Serve everything family style, including a small dish of the basil parmesan aioli or herby green sauce on the side. Enjoy!
