Spatchcocked Chicken

Our spatchcocked chicken with kale caesar salad is the perfect savory and fresh meal for spring! The spatchcocked chicken has some oven time, which seems like the perfect opportunity to pour yourself a glass of wine and enjoy a cozy evening. With minimal prep and maximum flavor, this kit is the ultimate weeknight win for two!

1) Preheat oven to 425°F.
2) Place the chicken into a lightly oiled baking dish or sheet pan. Transfer to the oven and roast on the center rack of the oven until a thermometer inserted into the thickest part of the leg reads 165°F – about 40-45 minutes.
3) When the chicken is ready, transfer to a cutting board and allow to rest - about 5-10 minutes.

4) While the chicken is resting, heat the mashed potatoes in the microwave with the lid askew until steaming, and assemble the salad. Toss the kale with croutons, parmesan, and dressing, then season with salt and pepper.

5) Carve the chicken, then portion onto plates. Drizzle the basil parmesan aioli over the chicken, serve alongside the mashed potatoes and salad. Enjoy!
