Our spin on a traditional slow braised Korean pork is known for being a special occasion meal. But with our shortcuts, it’s a perfect weeknight lettuce wrap complete with kimchi, chili crisp, and loads of our gochujang aioli!

    1) Carefully peel the lettuce leaves trying to keep them as whole as possible. Gently rinse the leaves and set aside on a serving platter. Thinly slice the scallions at an angle using both the white and green parts and set aside in a serving bowl.
    2) Transfer kimchi, chili crisp, and gochujang aioli into small serving bowls to serve tableside.
    3) Over medium-high heat lightly crisp the pork carnitas in a non-stick pan (about 3-5 mins) then add about half the ginger scallion sauce and let simmer as you heat up the rice. Use a fork to gently break apart the pork if necessary.
    4) Warm the rice in the microwave with the lid askew until steaming. About 3 minutes.
    5) Transfer rice and pork onto serving bowls alongside the lettuce cups.
    6) To serve, layer rice and pork into lettuce cups, sprinkle with scallions, a drizzle of aioli, and as much kimchi and chili crisp as you like!
