Instructions:
1) Trim the tough end from the broccoli. Cut into medium size florets.2) Slice the scallions on the bias. Set aside for garnish.
2) Add about 1-2 Tbsp of oil into a large pan over medium-high heat, then add in the flank steak. Cook on both sides until browned and internal temperature reaches 135ºF (for medium rare) – about 4-5 minutes per side. Transfer to a cutting board to rest.
3) In the same pan (no need to clean it!) add a bit more oil, if needed, and sauté the broccoli, peppers & onions until tender and a bit blistered – about 5-7 minutes.
4) Slice the steak against the grain, return to the pan and toss everything together. Stir in your desired amount of stir-fry sauce, reduce heat to medium-low and simmer to combine all the flavors – about 2-3 minutes.
5) Warm the jasmine rice in the microwave with the lid askew until steaming, then fluff with a fork.
6) Portion rice onto plates and top with stir-fry and garnish with the sliced scallions.
