Classic Pork Chop Dinner

Juicy Carlton Farms pork chops from our friends down in Oregon – a crackling crust served with a tart fruit compote and roasted broccolini makes for an elegantly simple dinner for two.

In your kit: 

  • K&M Thick Cut Pork Chops

  • K&M Broccolini with Rosemary & Garlic

  • K&M Mashed Potatoes

  • K&M Savory Fruit Compote


  • Olive Oil

  • Salt & Pepper


  1. Preheat oven to 425ºF.
  2. Toss broccolini with 1-2 Tbsp olive oil and ½ tsp salt and spread on a sheet pan. Roast in oven for 12-18 minutes until just tender. While the pork chops rest, toss with the rosemary & garlic paste and return to the oven for 2-3 more minutes.
  3. While the broccolini roasts, heat 1 Tbsp olive oil in a large oven-safe pan over medium-high heat. Place the pork chops in pan and sear the first side for 3-4 minutes or until well-browned. Flip and sear for another 3 minutes then place in oven (with the broccolini!) until the meat reaches 145ºF (for medium), around 5-10 minutes. Remove from oven and allow pork chops to rest for 3-5 minutes.
  4. Heat mashed potatoes in the microwave with the lid askew until steaming, about 2-3 minutes.
  5. Serve pork chops with savory fruit compote alongside the broccolini and mashed potatoes.
