Grilled Chicken Caesar

We crave the simplicity and lemony lightness of this classic entrée salad all summer long!

PREPARATION:

  1. Preheat grill to 400ºF (medium heat) with one burner turned to low, or set up the coals for indirect heat.
  2. Drizzle chicken with olive oil, then place on the hot side of the grill and cook for about 15 minutes. Tend frequently and turn often to avoid flare ups! Remove chicken when internal temperature reaches 165ºF, allow to rest.
  3. Slice cherry tomatoes in half, the lemon into wedges, and chicken breasts into 8-10 strips.
  4. In a large bowl, mix signature salad, halved tomatoes, croutons, and shaved parmesan. Toss with the desired amount of dressing, then season with salt and pepper. Top with sliced chicken and lemon wedges to squeeze tableside!
