This quick night vegetarian meal is all about layering texture and flavor! Warm quinoa and roasted sweet potato provide the base for crunchy pickled vegetables, healthy greens, and our famous Herby Green Sauce! Want to add some more protein? 1) Preheat the oven to 425ºF. Peel and cube the sweet potato into 1-inch pieces. Place on a sheet pan and lightly drizzle with olive oil and season with salt. Roast until tender and nicely colored – about 20-25 minutes.
2) Chop cilantro (including some of the stems – the most flavorful part!) and cube the avocado. Set aside.
3) Warm the quinoa in the microwave with the lid askew until steaming.
4) Portion the quinoa into deep bowls and top with baby kale. Then you can assemble all of the bowls exactly how you like! Layer in the roasted sweet potato, avocado, beets, and pickled red onions. Season with salt and pepper, then top with sprinkles of pepitas, cotija, and cilantro plus desired amount of herby green sauce.
Chef’s Tip: Stephanie likes to arrange all of the toppings on a serving platter served family style so everyone can keep mixing in more pops of flavor as they eat!
