We love a sheet pan dinner – primarily because it’s easy, delicious, and minimal dishes required! Our seasoned chicken thighs are served alongside honey harissa glazed roasted carrots and fragrant couscous – all topped with plenty of our herby green sauce!

Instructions:
1) Preheat oven to 425°F and line a baking sheet with parchment paper.
2) Cook the couscous pilaf according to the instructions on the package and hold warm.
3) Peel and thinly slice the red onion into wedges and spread onto the prepared baking sheet.
4) Place the chicken thighs, skin side up, on the baking sheet, nestled between the onion, and drizzle everything with about 2 Tbsp olive oil and season with salt. Place in the oven, onto a high rack, and roast until it reaches an internal temperature of 165°F – about 30-35 minutes.
Chef’s Tip: Feel free to broil your chicken for about 3-5 minutes if your oven didn’t do an adequate job crisping the skin!
5) While the chicken is roasting, place the carrots onto another baking sheet lined with parchment paper. Drizzle about 2 Tbsp olive oil and season with salt. Place into the oven and roast until tender – about 15 minutes. Carefully remove the baking sheet from the oven, then drizzle the carrots with the honey harissa glaze and toss to coat. Return to the oven for about 5 minutes.
6) While the chicken and carrots are roasting, prepare the salad! Start by peeling and thinly slicing the shallot. In a serving bowl, add the arugula, shallot, your desired amount of mustard vinaigrette, and season with salt and pepper.
7) Transfer chicken and vegetables to serving dishes and serve alongside couscous with plenty of herby green sauce. Enjoy!
