Instructions:
PREPARATION:
1) Scoop the cream sauce into a large pot. Then add equal parts water and stir together (we like to use the same jar as a measuring cup!).
2) Add pasta and bring to a simmer. Cook 5-7 minutes, stirring often, until pasta is tender.
3) Zest the lemon into the pot and add the cherry tomatoes (cut in half if desired!) and arugula to the pot.
4) Season to taste with salt and pepper, add a squeeze of lemon juice, and serve!
Chef’s tip: you may also enjoy a light side salad made from some of the arugula, a squeeze of lemon juice, a drizzle of your best olive oil, and a sprinkle of salt and pepper!
