Quicknight Pad Thai

 

A classic Pad Thai tossed with fresh veggies and chicken or tofu that we’ve already roasted for you. This dinner comes together faster than ordering takeout and is even more delicious!

Your kit includes:

Pantry items:

Instructions:

PREPARATION:

1) Slice the scallions on the bias, mince the cilantro (including some of the stems – the most flavorful part!), chop the peanuts and slice the lime in quarters. Set aside for garnish.
2) Dice the roasted chicken or tofu into bite-sized pieces.
3) Heat about 2 Tbsp oil in a large non-stick sauté pan or wok over medium-high heat. Add the peppers & onions and cook until tender (about 5-7 minutes). Toss in tofu or chicken to warm through (about 3-5 minutes).
4) If including eggs; crack into a dish and whisk to combine. Push veggies and protein to one side of the pan, then add the eggs to the other side. Cook until
edges start to set (about 1 minute). Scramble the eggs, then incorporate into the veggies.

5) Prepare the fresh pad thai noodles according to package instructions, then add your desired amount of noodles to the pan along with about half of the stir-fry sauce and half of the peanut sauce. Toss to combine (tongs work great here!) and cook until the noodles are warmed through and soaking up the sauce (about 1-2 minutes).

6) Transfer to a serving dish and top with a sprinkling of crushed red
pepper (if you want a little heat!), scallions, cilantro, and peanuts. Serve
family style with lime wedges on the side. Enjoy!
