This Thai-inspired meatball dinner is quick, easy, and out-of-this-world delicious! Packed with fresh herbs and veggies our chicken meatballs are warmed with our curried coconut lentil soup. Served with our jasmine rice, and fresh cucumber salad.
Your kit includes:
- Thai Chicken Meatballs
- Curried Coconut Lentil Soup
- Jasmine Rice
- Cucumber Salad
- Fried Shallots
- Cilantro
- Lime
INSTRUCTIONS:
- Heat the Thai chicken meatballs and curried coconut lentil soup together in a large pan over medium heat, stirring occasionally, until warmed through - a lid will help minimize splatters! (about 7-10 minutes).
- While the meatballs are warming, mince the cilantro (including some of the stems – the most flavorful part!), and slice the lime into wedges.
- Warm the rice in the microwave with the lid askew until steaming (about 3-4 minutes).
TO SERVE:
- Portion the rice into deep bowls. Ladle the meatballs and sauce over rice, and top with your desired amount of cucumber salad. Garnish with a sprinkle of cilantro, fried shallots, and a generous squeeze of lime. Enjoy!
