Thai Peanut Chicken Salad
If you are looking for a meal that is fresh, light, and full-of-flavor, look no further! Packed full of crunchy veggies, shredded chicken, rice noodles, and our tangy Vietnamese-style dressing, this salad is delicious, but also simple enough for an easy weeknight dinner.

1) In a non-stick pan over medium-high heat, add the shredded chicken and Thai peanut sauce to warm through – about 3-5 minutes.
2) Mince the cilantro, drain the Vietnamese pickles, and roughly chop the roasted peanuts, set aside.
3) In a large bowl, add the signature salad mix, fresh rice noodles, and Vietnamese pickles, then toss with desired amount of nuoc cham.
4) Top salad with chicken, fried shallots, cilantro, roasted peanuts and serve family style. Enjoy!
