Moroccan Chicken

The warming spices of za’atar seasoned chicken with harissa glazed carrots and fragrant couscous with a peppery arugula salad on a warm September night will leave you dreaming of your next exotic vacation!

1) Preheat oven to 450ºF.
2) Prepare couscous pilaf with the raw shallot per instructions on package (it will take approximately 20 minutes) and hold warm.
3) Place chicken skin side up on a sheet pan and drizzle with 1-2 tsp olive oil. Roast on a high rack in your oven until it reaches 160ºF (about 30-35 minutes).
4) Thinly slice radishes and place in a salad bowl with arugula. Set aside until ready to serve.
5) Toss shortcut carrots with 2 Tbsp olive oil and ½ tsp salt in the container they came in. Carefully add carrots to the sheet pan with the chicken. Roast until just tender and browned. While still warm, transfer to a serving bowl and toss with honey harissa glaze.
6) When ready, mound the couscous on a platter, and place roasted chicken on top. Serve with a small bowl of herby green sauce for drizzling! Toss the salad with desired amount of dressing and top with fried shallots.
