INSTRUCTIONS:
1) Preheat oven to 450ºF.
2) Place chicken on a sheet pan and drizzle with olive oil. Roast until a thermometer reads 155°F - about 30-35 minutes. Allow to rest for a few minutes, then thinly slice.
3) Peel and cut a quarter of the onion into very thin slices, reserving the rest for another use. Thinly slice the tomato.
4) Place the salad mix in a large bowl. Toss with the juice of the lemon, crumbled feta, a drizzle of your best olive oil, and season with salt and pepper.
5) Assemble! Spread a layer of hummus over each pita and top with your desired amount of chicken, onion, tomato, and salad greens. Serve with a big dollop of tzatziki, the remaining salad, and the olive mix tableside.
