The warming spice of za’atar seasoned chicken, pita wrapped in bright sauces, and a lemony salad make our take on this takeout classic a weeknight hero.

1) Preheat oven to 450ºF.
2) Place chicken on a sheet pan and drizzle with 1-2 tsp olive oil. Roast for 30-35 minutes, or until a thermometer reads 155°F. Allow to rest for a few minutes, then thinly slice.
3) Meanwhile, peel and cut a quarter of the onion into very thin slices, reserving the rest for another use. Thinly slice the tomato.
4) Place the salad in a large bowl. Toss with the juice of the lemon, a drizzle of your best olive oil, and season with salt and pepper.
5) Spread a layer of hummus over each pita and layer in the chicken, onion, tomato, and salad greens. Serve with a big dollop of tzatziki, the remaining salad, and the olive mix tableside.
