A weeknight favorite of ours! Flavorful butter chicken served over rice with a crunchy cucumber & cilantro salad.

K&M Butter Chicken
K&M Jasmine Rice
- Vegetable Oil
- Sambal (Optional)
- Slice cucumber into thin circles using a knife or mandoline. Slice half of the sweet onion into thin ribbons. Mince cilantro (including some of the stems – the most flavorful part!). Toss all together and dress with lime juice, a drizzle of oil and salt to taste. Allow to marinate 10 minutes.
- Warm the butter chicken and jasmine rice in microwave with the lid askew until steamy.
- Serve butter chicken over rice topped with fried shallots with the cucumber salad on the side!
Chef’s Tip: We like a small spoonful of sambal added to our cucumber salad to spice it up!
