Chickpea & Artichoke Gratin
Serve this hearty and warm vegetarian baked dish as a delicious side or with our arugula salad for an amazing plant-based dinner!

  • K&M Marinated Chickpeas

  • K&M Marinated Artichokes

  • K&M Pomodoro Sauce

  • K&M Lemon Pangrattato

  • Feta Cheese (optional)

Pantry Items: 

  • Olive Oil

Instructions:

  1. Preheat oven to 425ºF.
  2. Drain marinated chickpeas and artichokes and combine in a small baking dish (something around the size of a loaf pan is great!). Stir in 1 cup pomodoro sauce and then drizzle with 1-2 Tbsp of olive oil. Top with ½ cup crumbled feta cheese, if desired.
  3. Bake 20-25 minutes until hot and bubbling. Sprinkle on ½ cup pangrattato and bake another 5 minutes until browned.
  4. Serve hot!

    Chef’s Tip: This recipe is very easy to double for a larger crowd and makes for great lunch leftovers!
