Instructions:
- Preheat oven to 425ºF.
- Drain marinated chickpeas and artichokes and combine in a small baking dish (something around the size of a loaf pan is great!). Stir in 1 cup pomodoro sauce and then drizzle with 1-2 Tbsp of olive oil. Top with ½ cup crumbled feta cheese, if desired.
- Bake 20-25 minutes until hot and bubbling. Sprinkle on ½ cup pangrattato and bake another 5 minutes until browned.
- Serve hot!
Chef’s Tip: This recipe is very easy to double for a larger crowd and makes for great lunch leftovers!
