1) Snap meringues in half with your hands and plate individually. Don’t stress if they look rustic – that’s part of their perfectly imperfect charm! If you choose to break them up into a smaller crumble, you’ll create the famed Eton Mess dessert!
2) Spoon desired amount of passion fruit curd onto the top of the meringues.
3) Heap with a big dollop of whipped cream!
4) Peel and slice the kiwi, then arrange on top of the curd.
Chef’s Tip: The easiest way to peel a kiwi is to trim off the ends and carefully run a spoon just under the skin all the way around the fruit!
